Italian Sausage
Mix together:1 pound ground pork
1 medium onion, finely chopped
1 small garlic clove, crushed
Combine and mix into pork mixture:
1/2 tablespoon salt
1/2 teaspoon ground pepper
1/2 teaspoon fennel seed
1/4 teaspoon paprika
1/8 teaspoon ground thyme
1/8 teaspoon (or more) cayenne pepper
Shape into patties, meatballs, or stuff into casings.
