Sautéed Spinach
1 pound washed baby spinach leaves4 cloves garlic, smashed (or pressed)
4 Tablespoons extra virgin olive oil
Rinse the spinach well in cold water to make sure it's very clean. Spin it dry in a salad spinner, leaving just a little water clinging to the leaves. If the spinach is packaged pre-washed, then you don't need to do anything.
Heat oil in a large sauté pan with smashed cloves of garlic. When the garlic turns golden, but not brown, add the spinach and sauté until wilted.
You can cook a few minutes longer. Optionally covered, if you have a large cover.
Can top with a squeeze of lemon and freshly ground pepper.
