Recipe: Thai Chicken Lettuce Wraps

Thai Chicken Lettuce Wraps
3 tablespoon lime juice, fresh
1 1/2 tablespoon pure fish sauce, e.g. Red Boat Fish Sauce
1 1/2 tablespoon sauce, oyster-flavored
1 teaspoon chile garlic sauce
1 teaspoon olive oil
1 pounds chicken, ground
1/4 cup onion(s), green chopped (about 3 onions)
1/4 cup cilantro, fresh chopped
1/4 cup mint, fresh chopped
3 tablespoon cashews, or other nuts, chopped
12 iceberg lettuce leaves

Combine first 4 ingredients in a small bowl; stir well.

Heat oil in a large nonstick skillet over medium-high heat. Add chicken; 
cook 5 minutes or until done, stirring to crumble. Add onions, and sauté 
3 minutes. Add lime juice mixture, cilantro, and mint; sauté 2 minutes. 
Remove from heat; stir in nuts.

Spoon 1/4 cup chicken mixture onto each lettuce leaf, and roll up. Makes
12 servings.
