Satay Chicken
1/2 cup paleo BBQ sauce1/2 cup creamy almond butter
1/2 cup fresh lime juice
3 Tpl chopped cilantro
2 Lb boneless chicken breasts (skinless), cut into strips
24 wooden skewers (soaked in water for at least 1 hour)
Mix BBQ sauce, almond butter, lime juice, and cilantro in a resealable bag. Add chicken and seal bag. Turn bag several times to coat chicken. Refrigerate overnight. Heat grill to medium-high heat. Remove chicken from marinade. (Discard marinade.) Thread chicken on skewers. Grill 4-5 min per side, or until chicken is cooked through.
