Kohlrabi "Au Gratin"


Kohlrabi "Au Gratin"

1 and 1/2 lbs. kohlrabi, thinly sliced (replaces potatoes)
1/2 cup kohlrabi leaves, washed and thinly sliced
1/4 cup minced onion
1/3 cup coconut milk (replaces milk)
1 tsp. arrowroot (helps bind everything)
1 tsp. lemon juice (to give tartness)
kale crunch (see archives; this replaces bread crumbs)
salt and pepper to taste

Preheat oven to 350F. Combine arrowroot powder with coconut milk and lemon juice. Place a layer of kohlrabi in an oiled casserole dish. Sprinkle with a bit of onion, leaves, a tiny pinch of salt and some fresh pepper. Pour 1/3 of the coconut milk mixture. Make 3 more layers in the same fashion, pouring the last 1/3 of the coconut milk over the top. Cover and bake 30 minutes, then bake 15 minutes uncovered, until kohlrabi in tender. Remove from oven and add a generous sprinkle of dried kale on top.
