Fried Cauliflower With Saffron
1 large Cauliflower, divided into florets60 ml Ghee [or coconut oil]
1 pinch Saffron, ground
2 cloves Garlic, finely chopped
4 cm piece Ginger, cut into thin strips
5 ml Cumin, ground
2 Green chili peppers, seeds removed, cut into fine strips (optional)
Salt to taste
Black pepper, ground to taste
Blanch the cauliflower in salted boiling water for 2-3 minutes then drain.
Heat the ghee or oil in a large frying pan and fry the saffron, garlic, ginger, cumin and chillies for a few minutes.
Add the cauliflower and fry gently for 10 minutes, stirring occasionally.
Season with salt and ground black pepper and serve in bowls.
