Apples and Carrots
1 medium onion, chopped
1/2 cup olive oil
2 large apple, peeled and diced
6 medium carrots, thinly sliced
1/4 teaspoon nutmeg

Brown onion in oil and add apples and carrots. Season with nutmeg,
and salt and pepper to taste. Cover and simmer gently for about 20 minutes
or until tender, serves 6.
