Pork Rind-Sausage Stuffing

Pork Rind-Sausage Stuffing

3 bags of plain pork rinds (about 11 ounces)
1 pound breakfast sausage
lots of chopped celery
small amount of homemade stock (maybe a half cup?)
three or four beaten eggs
poultry seasoning
salt and pepper to taste

Pulverize pork rinds in the food processor.

Brown and break up the sausage. Brown the vegetables in the fat.

Mix everything together and put in an 8 inch square pan.
Bake at 350 or thereabout until firm.
