Simple Dry Marsala

2 tablespoons ground cumin
2 tablespoons paprika
1 teaspoon ground turmeric
1 tablespoon crushed coriander seeds
1 teaspoon cayenne pepper
1 tablespoon ground ginger
1 tablespoon ground cinnamon
1 teaspoon dry mustard

Place all ingredients in a medium-size skillet and heat over medium heat,
shaking skillet until the first tiny wisp of smoke appears, 2 to 3 minutes.
Let cool, cover well, and store in a cool, dark place.
Makes a little over 1/2 cup.
