Apple and Chicken Hash ---------------------- 1 tablespoon olive oil, divided 1 cup chopped onion 2 medium, tart cooking apples, peeled, cored, and finely chopped (about 3 cups) 1 1/2 cups chopped skinless, boneless chicken 1 teaspoon chopped fresh sage 3/4 teaspoon salt 1/4 teaspoon freshly ground black pepper 1/4 teaspoon paprika Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high heat. Add onion and apples; sauté 7 minutes or until mixture begins to brown. Spoon into a large bowl. Add remaining ingredients; toss well to combine. Heat remaining 1 1/2 teaspoons oil in pan over medium heat. Add apple mixture, and pat into an even layer in pan. Cook, without stirring, for 2 minutes.
