Vegetable Stuffed Mushrooms

12 medium mixed mushrooms
1/4 cup coconut oil
12 mushroom stems, chopped
3/4 cup onion, finely chopped
3/4 cup carrot, finely grated
2 tablespoons celery, finely chopped
1/4 teaspoon seasoning salt

Gently twist stems out of mushroom caps.

Melt oil in frying pan. Add remaining ingredients. Saute until vegetables
are softened. Remove from heat.

Stuff mushroom caps. Arrange on broilling pan. Broil until sizzling hot.
