Mashed Celery Root (Celeriac)
Celery root (approx. 1 lb.)1 tbsp. olive oil
dash of salt and pepper
Peel the celery root and chop into 1" cubes. Put into a medium sauce pan and cover with water. Boil for about 10 minutes, or until soft. Drain thoroughly and mash (preferably with a stick blender) until smooth. Stir in olive oil and season with salt and pepper.
