Recipe: Marinated Tomatoes
Marinated Tomatoes

5 large ripe tomatoes
1/4 cup olive oil
1 1/2 Tbsp lemon juice
1/2 clove garlic, minced
1/2 tsp oregano
1/8 tsp pepper
chopped parsley

Peel tomatoes and cut into thick slices. Combine remaining ingredients and
pour over tomatoes. Chill thoroughly, stirring once or twice. Garnish with
parsley.
