Gajar Ka Halwa (Carrot Halva)
1 kg Carrots, washed and grated1 quart Coconut milk
1 tsp Cardamom seeds, crushed
1/4 cup honey
6 tsp Ghee (or coconut oil)
4 tsp Raisins
4 tsp Almonds
4 tsp Pistachios
Cook the grated carrots in coconut milk and keep stirring well.
Add honey, mix well and cook till the honey has dissolved and all the coconut milk has been absorbed.
Add ghee, raisins, and crushed cardamoms.
Remove from heat and garnish with almonds and pistachios.
