Curried Conch (Trinidad)
1 cup conch2 1/2 cups water
1 tsp. salt
2 cloves garlic
3 stalks scallions
2 Tbsps. oil
2 Tbsps. curry powder
1 tsp. coriander
1 sprig thyme
1 small chayote
2 small carrots
Place conch, water, salt, garlic and scallions in a pressure cooker and allow to cook for 25 minutes, or until conch is tender.
Heat oil in a sauce pan, add curry powder and allow to heat for approximately 30 seconds, stirring occasionally.
Add coriander, thyme and conch along with liquid. Cut chayote and carrots in cubes. Allow vegetables to cook until tender crisp.
