Recipe: Spanish Meatballs

Spanish Meatballs
1 lb. ground chicken (breast or thighs, I've even used turkey)
1/2 onion
1 clove garlic
1 slice bacon, cut into small cubes (10 minutes in the freezer makes it
  easier to slice)
Olive oil
Salt and pepper
2 c. tomato sauce

Brown the bacon and drain over paper towels, cool. Saute the garlic and
onion in the bacon fat for 5 minutes. Add the bacon, garlic, onion, salt
and pepper to the ground chicken. Using your hands, mix thoroughly and form
into ping-pong ball size balls.

Heat a small amount of olive oil over high heat, once hot add meatballs and
brown. Once browned, turn heat to medium and add the tomato sauce. Simmer
until the meatballs are cooked through and the sauce is warm.
