Guyanese Beef Patty Filling

2 teaspoons oil
2 garlic cloves, minced
1 small yellow onion, chopped
1 pound ground beef
1 teaspoon black pepper
Leaves from 5 sprigs fresh thyme
2 scallions, chopped

In a large pan, heat oil over medium-high heat. Saute onions and garlic
until onions become translucent and tender, approximately 2 minutes. Add
the ground beef, salt, pepper and thyme, and continue to cook until the
meat is completely brown. Stir frequently to ensure even cooking. Mix in
scallions and cook for an additional 2 minutes.
