Meat Filling for Arepas
2 tablespoons olive oil1/2 lb. ground beef
1/2 lb. ground pork
1 medium onion, chopped
1 clove garlic, minced
1 green chili, chopped
2 large tomatoes, seeded and chopped
1/2 teaspoon achiote powder
1/2 teaspoon ground cumin
1/4 teaspoon thyme leaves
1/4 teaspoon black pepper
1 teaspoon salt
8 pimento stuffed olives, sliced
1 tablespoon capers
Heat oil in a heavy skillet over medium heat, add first 12 ingredients and cook, stirring occasionally, for 20 minutes, or until tomatoes have formed a thick sauce. Stir in olives and capers.
