Marinated Mushrooms [Italian]
8 ounces mushrooms, cleaned,quartered4 tablespoons fresh lemon juice
1/4 cup lite olive oil
2 tablespoons fresh parsley, finely chopped
1/4 teaspoon tarragon
salt and pepper
Combine all the ingredients. Mix well.
Add mushrooms, mix well.
Cover and refrigerate 24 hours.
