Guacamole Stuffed Cherry Tomatoes
1 pt. cherry tomatoes1 ripe avocado, halved, pitted and peeled
1 Tbsp fresh lime juice
2 Tbsp minced red onion
1 Tbsp. minced cilantro
1 small jalapeno, seeded and minced
Salt and pepper to taste
Slice and discard tomato tops. With small spoon remove seeds and pulp, discard. Drain tomato shells upside down on paper towels. In medium bowl mash avocado to a chunky consistency. Stir in lime juice, onion, cilantro and jalapeno. Season with salt and pepper. Fill tomato shells with guacamole.
