Coconut Chicken Nuggets


Coconut Chicken Nuggets

2 large chicken breasts
1 1/2 cups shaved coconut
2 egg whites
Salt and pepper

Preheat oven to 400 degrees F.
Cut the chicken into small chicken nuggets.
Season with salt and pepper.
In a bowl, whisk the egg whites until they are frothy and soft peaks form.
In another bowl add the shaved coconut.
Lightly grease two baking sheets.
Dredge each piece of chicken in the egg wash and then the coconut.
Place each piece of chicken on the cooking sheets.
Lightly grease the top of the chicken before putting it in the oven.
Cook for 10 minutes, then flip and cook for an additional 3 minutes or until the chicken is fully cooked.
Serve with dipping sauce. [See Nut & Seed Based ones.]

Suggestion: Before baking wrap each with bacon. No dipping sauce needed.
